It`s time of fava beans

Stewed of pork ribs with fava beans.


Ingredients for 4 persons:

500 gr. fava beans
800 gr. fresh pork ribs, from Carneiro e Salgueirinho.
Traditional meat sausage, from Carneiro e Salgueirinho.
Strips of cured ham, from Carneiro e Salgueirinho .
3 tablespoons olive oil.
4 cloves of garlic, minced
1 onion, finely chopped
1 tomato minced
1 bay leaf
Salt and pepper to taste

How to make:

In a pressure cooker, saute the garlic, onion and tomato. Add the pork ribs and cook a little. Season with salt, pepper and bay leaf. Cover the ribs with water and close the pressure cooker. Cook for 15 minutes. Open the pressure cooker and mix the fava beans, already cooked and skinned, the traditional meat sausage in pieces and strips of cured ham. Add a little of water and cook for 10 minutes (without pressure). Try seasoning and serve with white rice.
